GENERAL DESCRIPTION
Chef de Cuisine is responsible for entire kitchen operations during the absence of the Executive Chef. Works with the Executive Chef on every aspect of kitchen operation.
ESSENTIAL FUNCTIONS OF THE POSITION
These requirements/functions may change over the course of employment.
•Supervises food preparation, cost quality, quantity inventories, portion control, menu planning, recipes and testing of samples submitted to chef and management.
•Responsible for ordering and inventories. Product development and sourcing. Updating inventory sheets and order guides.
•Active collaboration in the design and implementation of epicurean, banquet and a la carte menus. Responsible for monthly production and training of line crew for chefs tasting menus.
•Maintains cooking standards to maintain a high quality of food and service.
•Verifies that kitchen staff follow all recipes and portion servings correctly and according to menu specifications.
•Must be able to successfully work Pantry, Sauté, Middle, Broiler, Dish and Expo stations. Covers any position due to staff absences (sick call, term, voluntary quit, discharge, etc.).
•Ensure that all hourly staff successfully adheres to the collective bargaining agreement and state labor laws regarding meal and rest breaks.
•Ensures proper handling and rotation of food products.
•Ensures proper closing procedures and opening procedures followed for kitchen.
•Keeps kitchen, dish and storage areas clean and organized. Maintains food storage areas in a clean, organized manner; follow all food safety procedures. Creates and manages day and evening cleaning schedules; dishwashers by start times.
•Works on line with line cooks during peak business hours in the evening.
•Checks time clock for accurate kitchen staff starts times.
•Receives and supervises proper rotation and stocking of food deliveries.
•Ensures that all stations remain stocked before and during the meal period.
•Receives products and verifies invoice pricing, quantity and that product meets specifications.
•Sets excellent customer service and work examples.
•Performs additional responsibilities, although not detailed, as requested by the chef at any time.
•Supervises all evening staff; create prep lists; makes sure all break and meal periods are adhered to; keeps staff motivated and on task.
•Oversees banquet production and make sure parties go on time and are presented to specifications.
•Coordinates lunch/dinner service and develop and implement daily specials adhering to chef’s cost pricing and preparation parameters.
•Maintains good communication between FOH personnel and managers.
•Handles operational situations when Executive Chef is not in house.
•Participate in weekly kitchen management meetings.
•Daily and weekly audits of payroll and EE breaks. Sunday before each payroll responsible for final payroll audit, staff signatures and submission to HR by Monday at 5:00pm.
•Obtains and maintains current ServSafe and Foodservice Management Professional (FMP) certification.
MARGINAL FUNCTIONS
•Sets excellent customer service and work examples.
•Trains and instructs cooks and other personnel for special events and dinner.
•Supervises and works special events and special functions under chef’s direction.
•Oversees monthly safety meetings with safety committee.
QUALFICATIONS
•College or culinary training and/or extensive cooking and production experience.
•10 years restaurant and supervising experience.
•Food and beverage knowledge.
•Knowledge of basic training techniques.
•Understanding of local, state and federal health and sanitation laws.
•Understanding of proper use and maintenance of major kitchen equipment, including stoves, refrigeration, slicer, knives and dish machine.

Qualifications
