Umai Bar & Grill is a growing neighborhood restaurant located at the corner of Grantline and Wilton Road. Currently we are seeking professionals to join our fast paced team. We are now accepting applications for highly experienced, modern and sophisticated outgoing kitchen head chef, sushi chefs, and line cooks. Prior experience in a Japanese restaurant/bar business is preferred. Although we desire someone who has creativity, our focus is on consistency. The ideal candidate is detail-oriented, organized, responsible, and has interest in Japanese food and culture.

Available positions include:


BOH:

Kitchen head chef
- Minimum at least 5 years of experience. Working with oven, fryers, and grills, team player taking pride in meals prepared, meals made per recipe/plate presentation. They are responsible for the food that comes out of a kitchen, from conception to execution. A head chef is a highly skilled professional cook who oversees the operations of a restaurant or dining facility.

***Kitchen head chef responsibilities include but are not limited to:

• Liaising with the relevant companies for food orders
• Creating new dishes and menus
• Maintaining/raising the food’s profit margins for employer
• Monitoring and controlling stock levels
• Ensuring correct stock rotation procedures are followed
• Implementation of health and safety procedures in the kitchen
• Estimating costs and ensuring all purchases come within budget
• Maintaining organization in all aspects of the kitchen
• Properly delegation of teammates

Line Cook - Minimum at least 1 year of experience. Cooks are responsible for prepping ingredients and assembling dishes according to restaurant recipes and specifications. Must have experience with kitchen appliances.

***Line cook responsibilities include but are not limited to:

• Estimating food requirements
• Operate a variety of kitchen utensils to weigh, measure, mix, wash, peel, cut, grind, stir, strain, season for cooking, serving and storing
• Prep all foods
• Properly store foods
• Clean/sanitize workstation to keep up with compliance with service standards
• Must adhere to all company standards and policies.
• Able to work nights and weekends.

Sushi Chef - Minimum 2 years of experience using knifes, making sushi rolls, and filet fishes.

***Sushi Chef responsibilities include, but are not limited to:

• Preparation of fish and making makis rolls, nigiri, and sashimi
• Knowledge of different elements in sushi
• Having and maintaining essential tools for sushi
• Setting up and stocking stations with all necessary supplies for service
• Preparing food for service with proper technique, presentation and skills
• Clean/sanitize workstation to keep up with compliance with service standards
• Able to work nights and weekends.


Must be able to pass the e-verify procedure and have Servsafe® certificate.
